Burbujas Cantosan Brut Nature
The wine making method is Champenoise or Traditional. It is mechanically night harvested to preserve the freshness of the grape. It is exclusively juiced from the first press in pneumatic press. It is cold on skin contact maceration for 8-12 hours. The alcoholic fermentation is controlled at 17º C in stainless steel tanks.
It is bottled with yeast and additional sugar in Champagne style bottles in which the second fermentation takes place. The bottle ageing on its lees in a Moorish underground cellar is at a constant 12ºC. Disgorgement and final corking follows.
The colour is a bright pale golden yellow. It has slow evolving, fine and elegant bubbles. It has fruit aromas of green apples, melon, lemon zest along with typical ageing aromas such as bread yeast, biscuits and butter and hints of aniseed. It is fresh on the palate with hints of ripe fruit on the finish together with toasty, nutty notes of bitter almonds and walnuts.
