It is hand harvested in small crates. Double sorting: first in the vineyard and then in the cellar. De-stemming. Alcoholic fermentation controlled at 28ºC in concrete vats for about 3 weeks. There is daily pumping over process to extract colour from the skins and control the fermentation temperature. Malolactic fermentation in stainless steel vats. It is aged in oak barrels. Fining and racking. Bottling and aged in bottle.
It has attractive, dark cherry-red colour with ruby glints. It is clean on the nose with fruit aromas mingling well with the oak (notes of vanilla, toast, spices, liquorice and truffles). It has great structure in the palate that is fleshy, soft, expressive and full with sweet, well integrated tannins. It has a great lingering finish.
