This wine is indescribably complex. The high level of sweetness is tempered with fresh acidity. The perfect balance between a vast spectrum of strong sensations is remarkable.
Some Australians draw comparisons with superb Rutherglen Tokays or Muscats. This is no fortified wine. Paradoxically, it seems as intense but somehow lighter perhaps because its alcohol is just 12% by Vol. One glass is just not enough. 6-PACK - 500ml bottles.

Vinification: The grapes used to produce this wine are dried on racks from the middle of September until the middle of March. They achieve a degree “Babo” of 39 (almost 430 g/l). In order to produce one litre of this Recioto, 18 kilograms of grapes are required. The fermentation is induced immediately after crushing by means of a small addition of standard Recioto Classico, already fermenting. Fermentation takes place at a temperature of below 14 degrees and lasts 50 days. The wine is racked with 260 g/l residual sugar and is placed in new baroques of Allier and Vosges oak. It remains on its own lees and batonnage is carried out several times over a thirty-month period.
