Made by traditional method or Champanoise. Its a 100% Verdejo with a minimum of 9 months of aging. It is perfect with food.
Aroma: It has fruity aromas (green apple, melon, lemon zest) together with aging aromas (yeast, biscuits, butter) and aniseed memories.
Palate: The palate is fresh with a very fine and elegant bubble. Finish with nuances of ripe fruit with toasted backgrounds and nuts (bitter almond, walnut)

Serving temperature: 6ºC
Vinification: For the base wine: Selection of grapes in the vineyard. Exclusively first pressing must in pneumatic membrane press. Cold maceration of the must with the skins for 8 - 12 hours. Fermentation in stainless steel at a controlled temperature of 17 º C. Bottling in Champagne type bottle with yeast and sugar where the second fermentation takes place in the bottle. Ageing with its lees in mudéjar cave at 12 º C Degüello and final corking.
