Harvest: Night harvest, by machine, to avoid the high temperatures of the time that may produce oxidations in the must before entering the cellar.
Vinification: Destemmed and crushed. Cold maceration of the must with the skin during 8 - 12 hours for the extraction of aromas. Light pressed. Fermentation in stainless steel tanks at a controlled temperature of 17 º C. Static debris. Clarification and cold treatment.
